- Place the sago in a dish with the water and let it soak for 15 minutes. Then drain the sago water and put it to boil for about 10 to 15 minutes with just water, always stirring. Given these 15 minutes or so when some pellets start to turn transparent Pour the contents of the pan into a colander and wash them to remove the resulting cooking slime. While it is draining, put the wine, sugar and a cup of water in the pan. When it starts to boil, add the sago and wait for another 15 minutes to cook, until all the balls are transparent. Place in a container and let cool.
