  • Qualho cheese1 kg
  • Qualho cheese1/2 kg
  • Granulated tapioca flour1 kg
  • Whole milk1 kg
  • Cheese of your choice300 g
  • Sour cream200 ml
  • Guava Jam350 g
  • Water200 ml
  1. Heat the milk until it almost boils (but don't let it boil, just get very hot)
  2. Grate the qualho cheese and mix it with the granulated tapioca flour
  3. TIP: If you prefer to add grated pepperoni, add half the cheese and half the pepperoni
  4. Add the milk to the dry mixture until the granules hydrate and get a homogeneous mixture.
  5. Mold into a shape so that it is straight, and keep it in the fridge for 2 hours.
  6. After this period, with the firm and gelatinous mass, cut the dice or in the shape you wish Fry in hot oil 150°C
  7. Add the cheese of your choice to a pan with cream (200 ml) and whole milk (50 ml) until it becomes a liquid, set aside and place in the fridge for 30 minutes.
  8. After 30 minutes, beat this cheese liquid until it turns into a cream (cheese emulsion).
  9. Place the guava paste with a little water in a pan over low heat until it becomes a liquid guava paste.
  10. On a plate, place the liquid guava paste and the cheese emulsion on top and distribute the already fried dice on top and good appetite
