- Coconut milk200 ml
- Cinnamon powder1 teaspoon
- Grated squash1 cup
- Demerara sugar or culinary sweetener3/4 cup
- Fresh grated coconut0.5 cup
- Fine cornmeal1 cup
- Peanut flour1 cup
- Baking powder1 tablespoon
- In a blender place all the liquid ingredients and blend everything.
- Add the grated coconut and beat for a few more minutes.
- Start adding the other dry ingredients little by little and beat again.
- In a greased form, pour the dough. Preheat the oven and bake the cake at 190 degrees for about 35 minutes or until golden.
- If you want a more practical way, bake it in the microwave.
