  1. Prepare the pineapple jam. Cut the pineapple into cubes, discarding the firm core. Place in a pan with 1 cup of sugar and 1 cup of water. Let it cook until the pineapple is very soft, about 20 minutes. Place the already cooked pineapple in a sieve to drain the syrup. We will use the syrup to wet the cake. Store in the fridge until time to assemble the cake.
  2. Prepare the coconut cream. First dissolve the starch in a little milk and pass the 2 yolks through a sieve. Take in a pan: 2 cups of milk and the dissolved starch. Leave on low heat and keep stirring. When the milk is hot, pour in the yolks and stir well. Add the condensed milk and grated coconut and keep stirring until it thickens well. Turn off the fire and add 1 box of milk cream. Mix well and let it cool.
  3. Prepare the dough. In a mixer, or with a wire whisk, beat 3 eggs, 2 tablespoons of margarine and 1 cup of sugar. Add the vanilla essence, wheat flour and 1 cup of milk and continue beating. Lastly, put 1 tsp of baking powder. Pour the dough into a greased and floured mold and bake in a preheated oven at 200° for about 40 minutes.
  4. Develop the cake and, when it's cold, cut it in half.
  5. Drizzle with half the syrup, place the cooked pineapple, top with the coconut cream. Place the other half of the cake and water with the rest of the syrup.
  6. Prepare the whipped cream as indicated on the package and, at the end, add 2 tablespoons of powdered milk. Mix well and cover the cake. Finish with grated coconut.
  7. Take it in the fridge for a few hours and serve very cold!!!
