- Sugar4 cup
- Water5 cup
- Grated Coconut2 cup
- Peel the pineapple, remove the middle to avoid bittering and chop into small pieces. I put it in filtered water high enough to cover them and another cup of sugar. Put to cook on high heat
- In another pan, make a caramel syrup with 3 cups of sugar and 2 cups of water. Reserve.
- Add this syrup to the cooked pineapple and leave it on the fire until the syrup thickens, for about 20 minutes.
- Add grated coconut and let it cook for another 10 minutes.
- Turn it off and put it in a glass pot for better conservation. Take it to the fridge after it's cold.
