- Oat flour1 cup
- Gluten Free Flour Mix1 cup
- Baking powder1 tablespoon
- Brown or coconut sugar1/2 cup
- Cinnamon powder2 teaspoon
- Salt1/2 teaspoon
- Eggs2 unit(s)
- Vegetable drink1.1/2 cup
- Peanut paste3/4 cup
- Apple, diced1 cup
- Vanilla Extract1 teaspoon
- Cut the apple, separating some slices for decoration (apply lemon so it doesn't darken, as I taught in Tips).
- In a large bowl, combine the flours, yeast, sugar, cinnamon and salt, mixing everything together. Reserve.
- In another bowl, add the eggs and beat them lightly. Add the vegetable drink, peanut butter, chopped apple and vanilla extract and mix well.
- Add the wet ingredients to the dry ones and beat until everything is evenly blended.
- Fill the muffin tins with the batter, using a ladle or an ice cream scoop to make the process easier and to put approximately the same amount in each tin.
- Decorate with the apple slice and sprinkle with ground cinnamon.
- Bake in a preheated oven at 180°C for about 20-25min or until the toothpick comes out clean.
- Wait for it to cool before serving.
