Passion Fruit Zabaione Pie

  • Maizena Biscuit200 g
  • unsalted butter100 g
  • Eggs8 unit(s)
  • Refined sugar300 g
  • passion fruit4 unit(s)
  • Cream cheese300 g
  • Colorless unflavored gelatin1 unit(s)
  1. Grind the biscuit and add melted butter, place in a 20cm round rim and leave in the fridge until hardened.
  2. Add 8 egg yolks to a bowl with 200ml of passion fruit juice and 150g of icing sugar. Take it to the bain-marie and mix until it thickens or reaches 80°C. Wait for it to cool and add 300g of cream cheese, also add the hydrated gelatin according to the instructions on the package and place it on top of the cookie dough and put it in the fridge for at least 8 hours.
  3. Make the Swiss meringue (recipe in my other preparations in this app) and dye it with yellow food coloring in some places in the mix. Decorate with the nozzle and add some passion fruit seeds (if you prefer).
