- Almond milk.50 ml
- coconut milk50 ml
- Coconut oil40 ml
- Grated Coconut50 g
- Xylitol150 g
- Gems9 unit(s)
- Vanilla5 ml
- passion fruit2 unit(s)
- Water300 ml
- Xylitol50 g
- Hydrate the coconut in the milks + the oil.
- Place the yolks with the melted xylitol and mix. Add the vanilla.
- Grease the mold with coconut oil and sprinkle with xylitol.
- Combine the two mixtures and place in the mold. Bake at 170 degrees for 20 minutes or so in a bain-marie with hot water. Let cool and unmold.
- Remove some of the passion fruit seeds (otherwise there will be a lot) and place it in the fire with the xylitol and let it reduce over low heat until the desired point is reached.
- Serve the quindim with the syrup.
