  • Almond milk.50 ml
  • coconut milk50 ml
  • Coconut oil40 ml
  • Grated Coconut50 g
  • Xylitol150 g
  • Gems9 unit(s)
  • Vanilla5 ml
  • passion fruit2 unit(s)
  • Water300 ml
  • Xylitol50 g
  1. Hydrate the coconut in the milks + the oil.
  2. Place the yolks with the melted xylitol and mix. Add the vanilla.
  3. Grease the mold with coconut oil and sprinkle with xylitol.
  4. Combine the two mixtures and place in the mold. Bake at 170 degrees for 20 minutes or so in a bain-marie with hot water. Let cool and unmold.
  5. Remove some of the passion fruit seeds (otherwise there will be a lot) and place it in the fire with the xylitol and let it reduce over low heat until the desired point is reached.
  6. Serve the quindim with the syrup.
