- half package of crushed sweet biscuits without filling to taste
- Filling
- In a bowl, mix the lemon juice and zest with the spoon. Reserve
- Roof
- In a saucepan, mix the egg whites and sugar and place over low heat, stirring vigorously non-stop, for about 3 minutes, taking the pan off the heat for a few moments every minute, continuing to stir so as not to cook.
- Transfer to a mixer and beat for 5 minutes or until doubled in volume and formed into a marshmallow.
- Add the lemon zest and mix gently.
- Reserve.
- Assembly
- In serving cups, make a layer of crushed biscuits, a layer of reserved filling, and finish with marshmallow.
- Serve.
