Lemon Pie (creamy)

Misture em 100 ml de água gelada o açúcar de confeiteiro e a gema de ovo. Em uma bancada limpa despeje a farinha e o sal. Misture com uma espátula raspadora ou com as pontas dos dedos a farinha e a manteiga até que tome uma textura de areia molhada.

Mix the icing sugar and egg yolk with 100 ml of ice water. On a clean countertop pour the flour and salt. Mix with a scraper spatula or the tips of your fingers the flour and butter until it takes on the texture of wet sand.

Abra um buraco no meio da farinha e desapeje o líquido de água, açúcar e gema, misture a massa até que fique homogênea e leve à geladeira por 2 horas.

Open a hole in the middle of the flour and pour out the water, sugar and yolk liquid, mix the dough until it's homogeneous and take it to the fridge for 2 hours.

No liquidificador bata o creme de leite, leite condensado e bata, depois acrescente o suco dos 4 limões (não esqueça de raspar a pele dos limões antes) bata até tomar uma textura firme, despeje em um bowl e leve pra geladeira para resfriar até que fique firme.

In a blender, beat the cream, condensed milk and whisk, then add the juice of the 4 lemons (don't forget to scrape the skin off the lemons first) beat until it takes on a firm texture, pour it into a bowl and take it to the fridge to cool until stay strong.

Bata a clara de ovo com o açúcar refinado em ponto de merengue e leve para resfriar. 

Beat the egg white with the refined sugar until meringue and let it cool.

Coloque a massa em uma assadeira de fundo removível, faça furos no fundo da massa com um garfo leve para assar no forno 200°c até que fique seca e dourada.

Place the dough in a removable bottom baking dish, make holes in the bottom of the dough with a light fork and bake in the oven at 200°C until dry and golden.

Deixe a massa resfriar e cubra com a mousse de limão, decore com o merengue e raspas de limão e deixe gelar por no mínimo 4 horas na geladeira. Depois se quiser queimar o merengue como quiser. E está pronto!

Let the dough cool and cover with the lemon mousse, decorate with the meringue and lemon zest and let it freeze for at least 4 hours in the fridge. Then if you want to burn the meringue as you wish. And it's done!
