- Hot water1 cup
- Hydrate the gelatin with a little cold water.
- Dilute the gelatin with hot water and set aside.
- Beat the egg whites in a bain-marie and add the sugar gradually until stiff.
- Add the lemon juice and zest and continue beating.
- Put the gelatine (warm to cold) in a thread and beat a little more
- Whip the ice cream until it becomes whipped cream
- Gently mix the cream with the egg whites and place in the fridge.
