  • Wheat flour1 kg
  • Warm water2 cup
  • Biological yeast sachet2 unit(s)
  • Sugar10 tablespoon
  • Salt1 tablespoon
  • Panettone essence3 tablespoon
  • Emulsifier1 tablespoon
  • Gems10 unit(s)
  • Lemon zest2 unit(s)
  • Butter or margarine8 tablespoon
  • Supplyable chocolate chips300 g
  • 250g Chocotone molds8 unit(s)
  1. In a bowl or planetary mixer add the egg yolks, sugar, salt, yeast, warm water, lemon zest and butter. Mix well and add the panettone essence.
  2. Done that add the wheat flour gradually and mix until the point that you can put it on a bench and beat for 15 minutes, or beat in the planetary mixer for 10 minutes.
  3. Add the emulsifier and continue beating until you have a soft but very homogeneous mass. Cover with a dish towel and take it to rise in the oven turned off, or even in the sun until the dough doubles in volume, approximately 1:30h
  4. After the dough has doubled in volume, add the chocolate chips and mix well. Put it in the panettone molds so that they all have the same amount of dough and take it to rise again inside the oven until it doubles in volume.
  5. After the dough has doubled in volume, light to bake in an oven at 180° until it is a little golden on top and you insert a toothpick and it comes out clean.
  6. Take it out of the oven and let it cool on the stove, you can fill it to taste.
