- Orange (without the peel and white part)1 unit(s)
- Rice (or wheat) flour1/2 cup
- Almond (or oat) flour1/4 cup
- Grated unsweetened coconut1/4 cup
- Egg2 unit(s)
- molasses*3 tablespoon
- Yeast1 tablespoon
- Beat all the ingredients (except the yeast) in the blender until you get a homogeneous cream (without pieces of orange). Add the yeast and beat just to incorporate.
- Bake in a preheated oven (180°) for 30 minutes (do the toothpick test). Wait for it to cool down to unmold.
- For the topping: mix 1 pot of unsweetened Greek yogurt with the juice and zest of 1 orange. Place on top of the cake and keep in the fridge.
- * you can substitute honey, oven and stove sweetener or sugar.
