  • Gluten-free flour1 cup
  • Eggs2 unit(s)
  • Coconut Sugar1 tablespoon
  • plant milk1 cup
  • Water1/2 cup
  • Melted coconut oil2 teaspoon
  • Salt1/4 teaspoon
  • Lemon juice1/2 tablespoon
  1. Mix all ingredients in a blender until well incorporated.
  2. Place the dough in the fridge for at least 30 minutes to allow the flour to hydrate. It will get creamier.
  3. Lightly grease a medium skillet with coconut oil and place over medium-high heat.
  4. Pour a ladle of dough into the middle of the heated skillet, turning so that the dough spreads all over the bottom.
  5. Cook until balls appear all over the crepe and the sides start to loosen and become crispy.
  6. Gently flip with a spatula and cook the other side quickly (30-40s).
  7. Repeat the process with the rest of the dough until finished.
  8. Then just fill it with whatever you prefer, such as jelly, dulce de leche, melted chocolate, fresh fruit..
