- Gluten-free flour1 cup
- Eggs2 unit(s)
- Coconut Sugar1 tablespoon
- plant milk1 cup
- Water1/2 cup
- Melted coconut oil2 teaspoon
- Salt1/4 teaspoon
- Lemon juice1/2 tablespoon
- Mix all ingredients in a blender until well incorporated.
- Place the dough in the fridge for at least 30 minutes to allow the flour to hydrate. It will get creamier.
- Lightly grease a medium skillet with coconut oil and place over medium-high heat.
- Pour a ladle of dough into the middle of the heated skillet, turning so that the dough spreads all over the bottom.
- Cook until balls appear all over the crepe and the sides start to loosen and become crispy.
- Gently flip with a spatula and cook the other side quickly (30-40s).
- Repeat the process with the rest of the dough until finished.
- Then just fill it with whatever you prefer, such as jelly, dulce de leche, melted chocolate, fresh fruit..
