- Gluten-free oat bran2 cup
- Almond flour2 cup
- Coconut Sugar3/4 cup
- Coconut oil3/4 cup
- Cinnamon to taste
- Almond milk1/2 cup
- Eggs3 unit(s)
- Coconut sugar for filling2 tablespoon
- Spices (we use cinnamon and cardamom) to taste
- Sliced banana (sliced or wide)6 unit(s)
- FAROFA: in a bowl mix all the farofa ingredients: oat bran, almond flour, coconut sugar, coconut oil and cinnamon. Reserve.
- FILLING: in another bowl mix all the ingredients of the topping with a fouet (wire whisk): almond milk, eggs, 2 tablespoons of coconut sugar and spices. Reserve.
- ASSEMBLY: in a shape of your preference, grease with coconut oil. Then place a layer of the farofa and line the entire bottom of the shape. Then cover with banana slices. And repeat the layering process, until you finish the farofa and bananas.
- When you finish the layers, pour the icing over the top and finish with banana and cinnamon.
- Bake in a preheated oven at 180°C for 30 minutes. Check with a toothpick if it is baked and remove from the oven.
- Wait for it to cool down to unmold.
