Gingerbread House (Christmas Cookie House)

  • Royal Icing Mix1/2 cup
  • Water to taste
  • Food gel coloring (optional) to taste
  • Sheets of bond paper (mold for the walls and roof of the house) to taste
  • Icing sugar to taste
  1. Prepare the cookie dough following the recipe on my profile ("Gingerbread cookies") and leave it in the fridge.
  2. Prepare the royal icing. The ready mix is super easy to prepare: just add water until you get the point. The secret is to get the point right so it doesn't get too liquid. For this, put 100g of icing powder in a bowl and 1/2 teaspoon (very little) of water. Mix well until smooth. Take the test: lift the spoon and drip some of the frosting over the rest of the frosting in the bowl and count the seconds until the drip disappears. At the right point, this takes 8 seconds. If it disappears too fast, it's too liquid and you solve it by adding more powder to the mixture. If it takes longer, it's too solid, add a little more water.
  3. Place the finished frosting in a pastry bag fitted with a thin simple tip (perlé) and set aside. If you don't have a pastry tip, when decorating, make a very small cut in the tip of the pastry bag.
  4. Prepare the molds in sulfite paper (I put the measurements in the photos of this recipe, just go to the side) - Rectangle for the side walls; - Slightly larger rectangle for the roof - Front and back mold of the house
  5. Prepare the molds on sulfite paper (draw the shapes with the help of a ruler and cut out. I prefer to cut with a knife to be very precise).
  6. Roll out the cookie dough to a size that allows for cutting the molds (you may need to make it in more than one pan or in more than one batch).
  7. As soon as you take it out of the oven, place the paper mold on top and cut with the help of a knife. Remove the burrs from the baking sheet and let the pieces cool.
  8. With the cookie ready and at room temperature, it's time to assemble! Start by gluing one side to the front of the house. Use the icing as "glue", press down well and wait for it to dry. Glue the second wall and finish with the back of the house. Finally, glue the two ceiling tiles, one at a time.
  9. If you want, use the leftover cookie to make a chimney! Tip: You can use a nail file (new, never used!) to file the cookie burrs and make them straight and the right size.
  10. Use the frosting to reinforce the "joints".
  11. When it's dry and firm, it's time to decorate!
  12. If you want to decorate in different colors, return some of the frosting to a bowl and use gel food coloring to achieve the desired color. Place in a new pastry bag.
  13. Unleash your creativity and draw with icing on doors, windows, tiles and even exposed bricks. If you want to make details on top of an icing decoration (like the red lights I made on the green part), wait for the bottom part to dry before it smudges!
  14. Sprinkle icing sugar on top of the house ready to make the snow effect!
  15. Your gingerbread house is ready! It looks beautiful as a cake topper, but can be used alone as a Christmas table decoration. To surprise the kids, hide bullets underneath!
