- Open the papayas and remove the seeds, grate them, cover with water and heat for 30 minutes.
- Remove the papaya from the pan and transfer it to a cloth bag and wash it, kneading and squeezing until it cools.
- Cut the rapaduras and take them to the fire with the papaya and stir with a wooden spoon until the bottom of the pan appears.
- Put the grated ginger in the jam and remove from the heat, let it cool and serve.
