- Almond milk or semi-skimmed milk1 cup
- Xylitol Sweetener1 cup
- Coconut oil1/4 cup
- Oatmeal or Almonds2 cup
- Cocoa powder1 cup
- Baking powder1 teaspoon
- Baking soda1 teaspoon
- Pinch of salt1 unit(s)
- Dark chocolate 70%200 g
- Whey-free sour cream180 g
- Chopped walnuts to taste
- Cranberries to taste
- In a bowl use a fouet or fork and beat the eggs until foamy.
- Add the xylitol sweetener, almond milk, coconut oil and beat again.
- Add the sifted cocoa powder and beat again.
- Add the pinch of salt, oatmeal and mix until smooth.
- Finally add the baking powder and bicarbonate of soda and stir gently.
- Grease a rectangular shape with a little butter and cocoa powder
- Preheat the oven to 180 degrees for about 15 minutes
- Pour the batter into the pan and bake for 30 minutes or until a toothpick comes out clean.
- Wait for it to cool and unmold
- Make the frosting by melting the chocolate in the microwave every 30 seconds.
- When the chocolate is well melted, add the cream and mix gently until smooth, creamy and shiny.
- Cover the cake with this chocolate frosting and add the cranberries and chopped walnuts.
- Place in the fridge for about 30 minutes
- Serve right away đ
- Store in the fridge to keep the coverage denser and creamy đ
