  • Egg yolk75 g
  • Sugar45 g
  • Vanilla essence to taste
  1. Weighing the ingredients is important for the cream to have a good texture.
  2. Mix all ingredients gently (do not beat)
  3. Place in dish or glass molds (do not use metal ones because of the gratin)
  4. Bake in a bain-marie in a low oven (preheated) for about 40 minutes (until the coat starts to brown)
  5. After baking, leave it in the fridge
  6. When serving, sprinkle sugar using a sieve and use a blowtorch to melt the sugar.
  7. Repeat the operation to make the cone very hard.
