  1. Sift and mix the wheat flour and baking powder very well.
  2. In the mixer, beat the sugar, salt and butter, add the yolks one by one and continue beating.
  3. Remove from the mixer, move to another container, add the sifted wheat flour mixture gradually interspersing with the milk.
  4. Beat the egg whites with a tablespoon of sugar in very firm peaks, incorporate the snow whites into the dough and stir slowly in circular movements from the bottom to the top, but without beating.
  5. Place the dough in a smooth round shape of 22 cm in diameter, greased and floured, smooth and level the cake in the shape, place another shape underneath to make sure the cake does not burn, bake in a preheated oven at 180º for about 40 minutes or until lightly golden, do the toothpick test, inserting the toothpick into the center of the cake, if it comes out clean it is ready.
  6. Remove from oven and unmold warm, let cool.
  7. Dissolve the cornstarch in the milk, mix the sugar and salt, cook, stirring constantly, until it forms a cream.
  8. Let cool, add the drained plums in syrup, stir again.
  9. Dissolve the cornstarch in the milk, add the sugar and salt, bring to a low heat in a heavy-bottomed pan, stirring constantly, until it thickens.
  10. Let it cool, add the cream and stir gently.
  11. Cut the cake into 2 or 3 equal circles, moisten with water and sugar syrup, place the filling on one of the halves.
  12. Cover with the other part and spread the frosting over the surface.
  13. Refrigerate for about 2 hours before serving, serve chilled, drizzled with plum syrup from the can.
