- Milk130 g
- butter80 g
- Flour100 g
- Instant coffee15 g
- Baking powder5 g
- Salt2 g
- Beat the yolks in the mixer until it becomes clear.
- Melt the butter in a bain-marie together with the milk and ground coffee.
- With a whisk, add the milk and egg yolks, adding the flour, salt and yeast.
- Beat the egg whites, adding the sugar in three parts, until firm.
- Combine the egg whites with the yolk mixture.
- Pour the dough into a hole mold (with a removable bottom) WITHOUT greasing it, as after baking it should be upside down until it cools down.
- Preheat the oven to 180 degrees and bake for 35 minutes.
