- Unsalted butter (for pasta)180 g
- Salt A Pinch to taste
- Refined sugar10 g
- Wheat flour (for dough)300 g
- Eggs360 g
- Whole milk (syrup)4 tablespoon
- CRACKELIN PREPARATION The craquelin is that cracked dough that is on top of the candy and that gives that crunchiness that we all love. To prepare, just mix all the ingredients until smooth and keep refrigerated. Mix 100g of unsalted butter, 100g of granulated sugar, 50g of wheat flour, 50g of 80% chocolate powder.
- PASTA Preheat the oven to 200°C. Boil the milk, butter, salt and sugar, pour in the sifted wheat flour and mix with the help of a spoon until smooth. Pour into the mixer and beat until the mass steam rises. Gradually add the eggs until smooth. With a pastry bag and a round nozzle, drip in a round shape, place the craquelin on the dough. Bake for approximately 30 minutes at 160°C.
- MOUNTING Fill the choux with your favorite ice cream. Sprinkle with chocolate 80% cocoa powder. Add your favorite chocolate syrup. ❤️
