  • Dark chocolate200 g
  • eggs4 unit(s)
  • 3 tablespoons of water3 tablespoon
  • 1 pinch of salt1 unit(s)
  1. Beat the egg whites and reserve. Cat jump: use a pinch of salt to help with consistency. Reserve.
  2. Beat the yolks until they are lighter and lighter. Reserve.
  3. Melt the chocolate with the water (it can be in a bain-marie or in the microwave).
  4. Add the yolks to the melted chocolate.
  5. Gently fold in the snow whites, 1/3 at a time.
  6. Now it's fridge for at least 2h.
