  • Butter80 g

  1. In a bain-marie, melt the chocolate together with the butter and set aside.
  2. Place the yolks in the bowl of a stand mixer. In a small pan put 110 g of sugar and 2 tablespoons of water and form a syrup. Beat the yolks with this still hot syrup
  3. In another bowl, beat the egg whites and when they are firm, add the rest of the sugar and beat until smooth. Now add the chocolate, egg cream and snow whites and take it to the fridge for at least 7 hours.
