  1. The banana peels can be beaten in a blender with the 2 eggs directly. But if you prefer, cook the banana peels with 1 tablespoon of vinegar (I always use apple), to leave the cake without the banana lint, cook until the peel is very soft. Beat the already cold or warm shells in the blender to avoid cooking the egg. Sweeten to taste, I add a cup of xylitol sweetener, but sometimes I use sucralose. Then beat the oatmeal and tapioca, add little by little. Taste the dough! See if you need to sweeten it a little more. Then, with the blender off, gently add the yeast soup. Preheat the oven to 200ºC. Transfer to a roast with a hole in the middle greased with oil of your choice or butter. Coach Tips: I added erythritol, and sucralose. If using sugar, add it to a tablespoon and keep experimenting. If you only have it in drops, I suggest you put 15 drops of sucralose sweetener.
  2. Cocoa powder can be 50% cocoa or more, the more cocoa, the less sugar. Chocolate milk is much more sugar than cocoa. If you are thinking about health and weight loss, choose 100% cocoa powder. If the dough becomes runny, add a little more oatmeal or add 1 tablespoon of crushed Psyllium (it's a fiber that you find easy at health food stores). Sweetening is a not very exact science! Because it will vary from your taste, and also if the other ingredients are stealing the flavor of the candy. For example, if the banana skin was very sweet, you might use less sweetness (either sugar or sweetener). If oat flour is very different from wheat flour, because with oatmeal the flavor is much more evident, while wheat flour is neutral. After adding the yeast, I add chia, sunflower seeds or flaxseeds.
