- Pãp de ló: liquid yolk passed through a sieve120 g
- Liquid egg white passed through a sieve150 g
- Sugar120 g
- Wheat flour120 g
- Salt1 g
- Cognac2 ml
- Yeast5 g
- Vanilla bean1 g
- Catupiry Cheesecake: Catupiry250 g
- Sugar75 g
- Eggs2 unit(s)
- Liquid yolk15 g
- Guava confit: Guavas2 unit(s)
- Sugar175 g
- Water88 ml
- 1/2 Thyme1 unit(s)
- Preparation of sponge cake: beat the egg whites and yolks and the sugar until it becomes a very fluffy and firm cream and triples in size.
- Add the sifted wheat flour and mix the portion gently.
- Bake in the oven at 160°C for 16 minutes.
- After cooling, cut the size of the cheesecake with a rim.
- Preparation of catupiry cheesecake: mix all the ingredients and put it in a shape with the sponge cake disk at the bottom.
- Bake in the oven at 90°C for 1 hour.
- Preparing guava confit: in a pan heated to 120°C, place the water and sugar and mix until a syrup is made.
- Reserve.
- Wash and break the guavas into pieces.
- Pour the hot syrup over the guavas and add a sprig of thyme.
