  • Concentrated cashew juice1000 ml
  • Sugar300 g
  • Colorless gelatin18 g
  • Frozen berries600 g
  • Lemon Juice20 ml
  1. Dilute the gelatin in 1/3 of the cashew juice until translucent. Heat up to 70 degrees
  2. Add 200g of sugar to the remaining juice and stir until dissolved.
  3. Add the hot gelatine in the cold juice and homogenize, provide us with small glasses of drinks and freeze.
  4. Make a berry coulis with the lemon juice and the rest of the sugar and the berries.
  5. Place the coulis over the cream and decorate and serve well chilled!
