  • Coarsely sliced carrot180 g
  • Egg2 unit(s)
  • Coconut oil1/2 cup
  • Demerara sugar3/4 cup
  • Wheat Flour1 cup
  • Chemical Yeast1 teaspoon
  • Chocolate Chips1/2 cup
  1. In a blender beat the carrot, sugar, oil and eggs until you get a homogeneous cream.
  2. Pour the blender mixture into a container, add the wheat and mix well. Add 2/3 of the chocolate chips as well and mix.
  3. Add the yeast and stir gently to incorporate the dough.
  4. Put the dough in greased cupcake molds and put some chocolate drops on top.
  5. Place in a preheated oven at 180°C to bake for about 20 minutes (do the toothpick test).
