Carrot Cake with Chocolate Icing

  • Carrot150 g
  • Whole wheat flour3 cup
  • Water1 cup
  • Xylitol2 tablespoon
  • Eggs3 unit(s)
  • Lactose-free cream1 can(s)
  • 70% chocolate bar150 g
  • Coconut oil3 tablespoon
  • Baking powder1 tablespoon
  1. In a blender, add the washed and cut carrots, xylitol, water and coconut oil. Beat well until it forms a homogeneous mass.
  2. In a bowl put the wheat flour, pour the liquefied mixture and finally add the baking powder. Mix well. Pour the dough into a greased shape according to your preference and take it to bake for approximately 25 minutes.
  3. For the topping: in a glass container, add the chocolate and the cream, take it to the microwave, stirring every 30 seconds until the syrup forms.
