  • butter or coconut oil1/2 cup
  • coconut flour1 cup
  • oat bran1/2 cup
  • demerara sugar1/2 cup
  • brown1/2 cup
  • baking powder1 tablespoon
  1. Beat the carrots + eggs + butter/oil in the blender. Then, mix the sugar and flour (because of the coconut flour, the dough is really firm and you have to spread it out, but don't be scared because it works!), and finally the yeast.
  2. Transfer to a greased shape and take it to the preheated oven at 180ºC for about 30-35 minutes. The frosting is to taste, I made a syrup by diluting the peanut butter with a sweet dulce de leche flavor
