- Separate the yolk from the white
- Beat the egg whites in a stand mixer for 3 to 4 minutes.
- Sift the yolks and add the water and beat together with the whites.

- Sift the wheat flour and I turned off the mixer and gradually add the flour and use a whisk so as not to remove the lightness of the dough
