- 1.Peel the bananas and cut them into slices. 2.Place the sugar and water in a large pan and place over medium heat. Cook the syrup until it becomes thick. 3.Add the bananas and lemon juice to the pan and stir. Let it cook, stirring occasionally, for about 90 minutes or until the candy starts to turn a darker color. 4.From this point on, stir constantly. Be very careful not to burn yourself, as the candy tends to splash out of the pan. If necessary, wrap a dish towel in your hand and arm to protect yourself from spills. 5.Cook for another 30 minutes or until the candy releases from the bottom of the pan. At this point, it should be dark brown. 5.Turn off the heat and transfer the candy to a heatproof bowl. Cover with film and let cool.
