- sifted wheat flour400 g
- green banana flour30 g
- baking powder1 tablespoon
- demerara sugar300 g
- Pinch of salt1 to taste
- Eggs2 unit(s)
- coconut oil2 tablespoon
- coconut milk200 ml
- mashed avocado1 unit(s)
- Grease and flour a 22 cm diameter round shape with a central hole.
- In a bowl, sift and mix the wheat flour, banana flour and baking powder very well, set aside.
- Beat the sugar, salt and eggs in the mixer until it forms a whitish cream, add the coconut oil and continue beating, put the coconut milk and the mashed avocado, mixing well, add the wheat flour mixture little by little, stirring. always, but without knocking.
- Put the dough in the already greased and floured shape, smooth and level the dough in the shape, take it to bake in a preheated oven at 180º for about 40 minutes or until lightly golden, put another shape below to make sure the cake won't burn.
- Do the toothpick test by inserting a toothpick into the center of the cake if it comes out clean it is ready.
- Remove from the oven and unmold warm, let it cool.
