  • For the dough 250 grams of wheat flour, 20 grams of butter, warm water and a pinch of salt.0 g
  • For the filling. 3 peeled apples, thinly sliced, 30 grams of chopped walnuts, 30 grams of chopped Brazil nuts, a medium box of seedless dark grapes, sugar to taste, cinnamon to taste, oat flour to taste and icing sugar.0 g
  1. Mass preparation. Place the flour, butter and salt in the bowl of the mixer and mix, then gradually add the warm water until the dough comes off the bowl and beat for ten minutes to develop the gluten and give the dough elasticity. Let it rest for 30 minutes in the mixer bowl covered with cling film.
  2. For the filling. Put the pieces of sliced apples in a pan and bring to the fire with sugar and cinnamon powder until dry a little. Reserve. Take the dough after it has rested for 30 minutes and start rolling it out by hand stretching until it forms a thin, almost transparent vel. Place the open dough on a cloth (the cloth does not let the dough stick). Trim the edges if it's too thick. Sprinkle the oatmeal all over the dough, spread the caramelized apple on the dough, then the chopped walnuts, chopped Brazil nuts, the grapes, sprinkle sugar and cinnamon on top and roll the stuffed dough into a roulade. At the end of the dough, pass a little water on the edge and finish the turn to close the apfelstrudel. Grease a mold with butter and place the alpelstrudel in the mold and brush butter over the dough. Bake in the oven at an average temperature of 180 degrees. Bake for 35 minutes or until golden. Remove from the oven, brush a little more butter, brush with a beaten egg yolk and return to the oven to brown more. After browning the dough, take it out of the oven and sift in icing sugar to finish the decoration. Cut into slices and serve.
