  • 1 1/2 cup all-purpose flour600 g
  • 1 tablespoon of dry yeast10 g
  • 3/4 cup of water150 ml
  • 4 1/2 all-purpose flour450 g
  • 1/2 cup sugar80 g
  • Egg Yolks4 unit(s)
  • 1 teaspoon of salt5 g
  • 3 tablespoons of butter or margarine75 g
  • 1/3 cup of water70 ml
  • 1 tablespoon of panettone essence12 ml
  • 1 tablespoon of honey20 g
  • 1 1/2 cup chocolate chips210 g
  1. In a bowl put 1 1/2 cup of wheat flour, the dry yeast and mix. Add 3/4 cup of water and mix until you get a paste. Cover and let rest for 30 minutes.
  2. After 30 minutes, add the sugar, butter or margarine, honey, egg yolks, the essence of panettone, a little of the remaining wheat flour, salt, 1/3 cup of water and mix well.
  3. Add the flour little by little while mixing. Transfer the dough to a bench sprinkled with wheat flour and knead the dough for about 15 minutes.
  4. Open the dough with your hands, spread the chocolate chips and close the dough by folding it over the drops, knead gently so that the chocolate likes are incorporated into the dough and become homogeneous.
  5. Divide the dough into 2 portions and place in bags suitable for baking panettone. Let rest for 1 hour or until doubled in size.
  6. Make a +-shaped cut in the center of each panettone, place a spoon of butter and bake in a preheated oven at 180°C for 35 minutes.
  7. Let cool completely and serve.
