Peel the beets and cook in water until soft but firm.
Cut in half; remove the pulp by making a hole with a spoon
Mix the other ingredients (the garlic is finely chopped) and stuff the beets. If you want, you can put half of each nut on the top and sprinkle parsley in the cream to give it more color and a beautiful decoration.
Place in the fridge to cool well.
Ideal as a starter and especially on very hot days.
