Strawberry Cup with White Chocolate

  • Cream: Condensed milk395 g
  • Cream: Cream (1/2 cup)240 ml
  • Cream: Milk Powder1 cup
  • Ganache: White Chocolate300 g
  • Ganache: Cream (1 and 1/2 cup)360 ml
  • Ganache: Strawberry300 g
  • Meringue: Clara3 unit(s)
  • Meringue: Sugar (1/2 cup)8 tablespoon
  • Assembly: Strawberry500 g
  1. For the sponge cake dough, separate the whites from the yolks. Start by beating the egg whites until stiff, then add the yolks one by one. Add the sugar little by little. Reduce the speed of the mixer and add the flour slowly.
  2. Line a removable bottom shape with butter paper. Place the dough and bake in a preheated oven at 180 degrees for 30 minutes. Expect to cool down and unform the cake.
  3. For the cream, mix condensed milk, powdered milk and cream. Bring to a boil over medium heat, stirring constantly. When it starts bubbling, turn it off and set aside.
  4. For the ganache, melt the white chocolate. Slightly heat the cream to avoid thermal shock and mix with the melted chocolate. Beat the strawberries in the blender, until it turns into a puree. Add the strawberry puree to the ganache and mix. Reserve.
  5. For the meringue, mix the egg whites and sugar until you notice that the sugar has dissolved in the egg whites, then cook in a bain-marie. Then beat with an electric mixer on high speed until stiff.
  6. Build in layers. Put the cream first, followed by the minced dough. Then have the strawberries and over the ganache. Finish with the meringue and decorate with more strawberries.
