- Pumpkin pumpkin500 g
- Escarole1 unit(s)
- Onion0.5 unit(s)
- Garlic Clove2 unit(s)
- Olive oil1 tablespoon
- Salt to taste
- Pepper to taste
- Ginger Powder0.25 coffee spoon
- Peel and cut the pumpkin into cubes. Bring to a boil until slightly soft.
- Wash the escarole well and cut into medium slices.
- Heat a large pan, add the oil and sauté the onion and garlic.
- Add the escarole and sauté until it starts to wilt.
- Add the pumpkin and season with salt, pepper and ground ginger.
- Cover the pan and let it cook for 5 minutes. Serve next.
