Pumpkin hide with shimeji

Cortar a abóbora em filetes e colocar para cozinhar em água (ou a vapor) até amolecer 

Cut the squash into fillets and cook in water (or steam) until softened.

Em uma panela, acrescentar a cebola bem picada e o alho, fritar até dourar 


In a pan, add the finely chopped onion and garlic, fry until golden.


Amassar a abóbora até virar purê. Adicionar na panela com a cebola e alho refogados e acrescentar 1 colhe de sopa de manteiga e sal a gosto. Mexer até atingir uma consistência de purê. (Se necessário, acrescentar meio copo de água). Reservar 

Mash the pumpkin until it turns into a puree. Add to the pan with the sauteed onion and garlic and add 1 tablespoon of butter and salt to taste. Stir until it reaches a puree consistency. (If necessary, add half a glass of water). Reserve

Separar o shimeji com as mãos. Importante! Não lavar o shimeji!. 

Separate the shimeji with your hands. Important! Do not wash the shimeji!.

Em outra panela acrescentar 1 colher de sopa de manteiga e em seguida acrescentar o shimeji.

In another pan add 1 tablespoon of butter and then add the shimeji.

Mexer até começar a murchar. Adicionar o vinagre de arroz e o molho shoyu. Mexer por uns 5 min. 

Stir until it starts to wilt. Add rice vinegar and soy sauce. Stir for about 5 min.

Em uma refratária adicionar o shimeji e em seguida o purê de abóbora. Levar ao forno por 10 min. (Pré aquecer o forno por 5 min). Servir 


In a refractory add the shimeji and then the pumpkin puree. Bake in the oven for 10 min. (Preheat the oven for 5 min). Serve
