  • Nirá | 1 to taste
  • Mushroom Paris | 50 g
  • Shimeji | 100 g
  • Shitake | 100 g
  • soy sauce | 30 ml
  • Roasted sesame oil | 10 ml
  • Garlic | 15 g
  • Soybean oil | 15 ml
  • Salt | 1 to taste
  • Sesame | 20 g


  1. Clean and trim the nirá sauce (cut off the underside of the stalks as it is very fibrous)
  2. Chop the garlic, mushrooms and nirá
  3. In a skillet over high heat, heat the oil, brown the garlic, nirá and mushrooms.
  4. Deglaze with the shoyu and, if necessary, adjust the salt
  5. Lower the heat, add the toasted sesame oil and the toasted sesame seeds.
