- Olive oil100 ml
- Salt and pepper to taste
- Paprika1 dessert spoon

- Cherry tomato300 ml
- Cut the eggplant into cubes
- Cut the peppers into cubes
- In a pan sauté garlic with onion in olive oil
- Add the peppers and eggplant with cherry tomatoes, sauté for 5 minutes, add the spices, stir gently
- Distribute the braised eggplant on a platter, take it to the oven for 25 minutes
- Serve with fresh rice
- Japanese eggplant is less acidic than the others, sweet and creamy. Delicious!
