- Sliced eggplant500 g
- Salt0 to taste
- Black pepper1/2 teaspoon
- Milk200 ml
- Wheat Flour200 g
- Breadcrumbs350 g
- Sliced Mozzarella Cheese300 g
- Tomato sauce500 g
- Fresh Grated Parmesan150 g
- Soybean oil for deep frying0 to taste
- Season the eggplant slices with salt and pepper.
- Dip in wheat flour, milk and breadcrumbs.
- Fry the slices in hot oil until golden and set aside.
- On a platter mount layers of eggplant, sauce and cheese until finished with sauce and parmesan.
- Take it to the oven or microwave just to warm up.
- Serve with white rice and a salad.
