- Large diced eggplant1 unit(s)
- Diced Red Pepper100 g
- Diced Yellow Pepper100 g
- Chopped white onion100 g
- Sliced garlic2 tablespoon
- Sesame and flaxseed2 tablespoon
- Olive oil to taste
- Chopped Basil to taste
- Salt, chimichurri, lemon and hot paprika to taste
- In a frying pan I started browning the garlic in the oil, I added the peppers and onion and all the seasonings, finally the eggplant and a little water, the cooking is very fast, as it dries add a little more water.
- I drizzled with more olive oil and as I really like acidity I added lemon. It's delicious, I like to serve it with bread or toast 😋
