Pumpkin Peels1/2 cup
Tomatoes50 g
Saffron1 tablespoon
Chopped Pepper1 unit(s)
Salt, oil to taste
Sliced Garlic1 tablespoon
Sliced onion1/2 unit(s)

I fried the slices of garlic and onion in olive oil, added the lentils and pumpkin skins, seasoned with salt, pepper and saffron, added 1 cup of water, covered the pan and cooked for 15 minutes.
After that time, the lentils were already soft, but I left them in the fire for another 5 minutes to refine the broth. I added the tomatoes at the very end, turned off the heat. It's delicious and super nutritious.
