- Palm oil1 teaspoon
- Olive oil1 teaspoon
- Onion cut into slices1 unit(s)
- Green and red peppers, sliced1 unit(s)
- Tomato cut into slices4 unit(s)
- Tin peeled tomatoes1 unit(s)
- Coconut milk1 unit(s)
- Salt, black pepper and cayenne pepper to taste
- Banana cut in half “fillet type” marinated in juice of 1 lemon5 unit(s)
- Chopped coriander to taste
- Sauté the onion in olive oil and palm oil until golden.
- Add the peppers and sauté for another 2-3 minutes.
- Add the sliced tomatoes and the tomato can and season with salt, black pepper and cayenne pepper. Cook for 7 minutes or so until the tomatoes soften.
- Add the coconut milk and when everything boils again add the banana with the lemon juice and cook for another 10 min. If you want, you can add chopped cilantro.
