  1. Cut 1 tomato, zucchini and eggplant into 0.5cm slices and assemble in a glass marinex, interspersing the vegetables, with sliced onions and sliced garlic on a mandoline.
  2. Take 2 tomatoes and chop them into cubes, in a pan sauté 3 cloves of garlic laminated with 1/3 of the chopped onion, add the tomato, 1/2 cup of water, adjust the salt and let it cook on low heat until it breaks down. Finish the sauce with fresh basil and set aside.
  3. Drizzle the vegetables with plenty of olive oil and oregano and add the homemade tomato sauce, put in a preheated oven at 180 degrees for 15 minutes with aluminum foil.
