- Quinoa beans1 cup
- Boiled Broccoli1 cup
- Onion cut into cubes1 unit(s)
- Cherry tomato cut in half1 cup
- Seedless bell pepper, cut into thin slices1 cup
- Chopped chives3 tablespoon
- Curry1 teaspoon
- Spicy paprika1 teaspoon
- Salt1 teaspoon
- Olive oil1 tablespoon
- In a pan, put the quinoa beans to cook with 4 cups of water. The cooking process takes about 15 minutes, but stay tuned until the water dries up. Meanwhile, prepare the other ingredients. Boil a pot of water and add the broccoli trees after boiling. Then, drain and rinse with cold water. This will make the broccoli al dente and not overcook it. Saute onion and peppers in oil. Add the cooked broccoli, cooked quinoa and seasonings. Stir quickly and turn off the heat. Finally, add the chives and stir again. Place in the fridge for at least 1 hour before serving. Voila! Your quinoa salad with peppers is ready!!
