- Boil the lentils in a large pot covered with water plus 3 centimeters above the lentil line for 35 minutes stirring occasionally and adding water when the level is too low.
- In a skillet, sauté the minced garlic and chopped onion in 1 teaspoon of oil until toasted, then add the minced celery, peeled and sliced carrots and squash.
- Add some water to the skillet to loosen the caramelization flavor and then pour it into the pot of boiling lentils.
- If the lentils are tender, add a can of tomatoes...if not, check every 5 minutes until they are, then add the tomatoes and seasonings to the pan. Cook for another 10 minutes, then taste for salt and adjust accordingly.
