  • Pumpkin1/2 cup

  • Black pepper to taste
  • Salt to taste
  • Fine herbs to taste
  1. Boil the lentils in a large pot covered with water plus 3 centimeters above the lentil line for 35 minutes stirring occasionally and adding water when the level is too low.
  2. In a skillet, sauté the minced garlic and chopped onion in 1 teaspoon of oil until toasted, then add the minced celery, peeled and sliced carrots and squash.
  3. Add some water to the skillet to loosen the caramelization flavor and then pour it into the pot of boiling lentils.
  4. If the lentils are tender, add a can of tomatoes...if not, check every 5 minutes until they are, then add the tomatoes and seasonings to the pan. Cook for another 10 minutes, then taste for salt and adjust accordingly.
