- Medium eggplant2 unit(s)
- Tamarind paste1 tablespoon
- soy sauce2 tablespoon
- Warm water2 tablespoon
- Honey1 teaspoon
- Soak the tamarind paste (easily found at an oriental food store) with lukewarm water for 10 minutes
- Add the rest of the ingredients and mix well.
- Cut each eggplant lengthwise and make diagonal cross cuts in the flesh without reaching the skin.
- On a barbecue grill first the flat side until golden (about 5 minutes) turn and brush the sauce on this side. Let the eggplants absorb some of the sauce and turn again for 2 minutes until dry. Flip again and brush on a little more of the sauce. Repeat the operation until the eggplant is soft and caramelized.
